coconut milk pulao recipe | coconut rice pulao | coconut milk pulav with step by step photo and video recipe. rice based pulao are very common across india and it is one of the most sought dish. perhaps due to the simplicity of these dishes and also the fact that these are one pot meal. one such easy and popular south indian alternative is the coconut milk pulao recipe known for its flavour and taste.
i had already posted this recipe long back, perhaps one of my earliest recipe. to be honest i had received very good response but lately i started receiving comments to make the video better. as matter of fact, i am revisiting all my old recipes and giving it a facelift. at the same time, i am also making an attempt to make the recipe better. well in this recipe, i have made it more spicier as i did lot of request to do the same. in my previous version, it was more creamy and rich. even though it was tasting great, but i got few comments saying it was bloating after the meal. also it wasn’t satisfying the hunger and hence i planned it to make it more spicier in this version.
anyway, i would like to highlight some of my tips, suggestions and variations for a perfect coconut milk pulao recipe. firstly, the recipe tastes good when it is made with basmati rice or any long grained rice. having said that you can also make it with sona masuri, but do not make it mushy or over cooked. secondly, i have made this recipe as one pot one meal in a pressure cooker. well it is much easier this way, but not necessarily you have to follow this way. you can also use pre cooked rice and mix it with same masala. lastly, the recipe tastes itself without any sides but tastes great with biryani gravy or a simple raita.

Ingredients
- 2 tbsp oil
- 1 tsp cumin / jeera
- 2 pods cardamom
- 1 inch cinnamon stick
- 4 cloves
- ½ tsp fennel / saunf
- 1 bay leaf
- 12 cashew / kaju
- 1 onion, sliced
- 1 tsp ginger garlic paste
- 1 carrot, finely chopped
- 5 beans, finely chopped
- 2 tbsp peas / matar
- 2 cup coconut milk
- 1 cup basmati rice, soaked 20 minutes
- ½ tsp salt
- 2 tbsp coriander, finely chopped
Instructions
firstly, in a cooker heat 2 tbsp oil and saute 1 tsp cumin, 2 pods cardamom, 1 inch cinnamon stick, 4 cloves, ½ tsp fennel and 1 bay leaf.
add 12 cashews and roast to golden brown.
further add 1 onion, 1 tsp ginger garlic paste and saute until raw aroma disappears .
additionally, add 1 carrot, 5 beans and 2 tbsp peas.
saute for a minute without overcooking veggies.
now add 2 cup coconut milk and mix well.
further, add 1 cup basmati rice and ½ tsp salt.
cover and pressure cook for 2 whistles on medium flame.
now add 2 tbsp coriander leaves and mix well.
finally, enjoy coconut milk pulao with biryani gravy.

notes:
- firstly, if using thick coconut milk then dilute with 1 cup water.
- also, add vegetables of your choice to make pulao nutritious.
- furthermore, if cooking in kadai then simmer for 20 minutes.
- finally, coconut milk pulao recipe tastes great when prepared slightly spicy.
