I have been sipping on herbal co*cktails like this Pineapple Sage Blackberry Mimosa all summer long. I love growing my own herbs so I can enjoy a Mojito or herbal flavored co*cktail whenever the mood stricks.

This was the first year I grew pineapple sage. Wow, I have really been missing out! I loved the flavor of this pineapple sage co*cktail. I wish I had grown it sooner.

How To Make a Pineapple Sage Blackberry Mimosa

Ingredients

  • ⅓ cup pineapple chunks
  • 4 large Pineapple Sage leaves, rinsed under cold water and patted dry
  • 2.5 oz pineapple juice
  • 1-2 oz blackberry simple syrup
  • Pink Moscato Champagne, Prosecco or favorite champagne
  • ice cubes

Directions

  1. Place the pineapple chunks and fresh pineapple sage leaves in a co*cktail shaker and muddle with a co*cktail muddler until the leaves are broken up and have released their herbal essence.
  2. Pour the pineapple juice and blackberry syrup into the co*cktail shaker along with about 4 large ice cubes. Cover and shake until well chilled.
  3. Remove the lid from the co*cktail shaker and strain into a champagne flute until it is halfway full.
  4. Top the champagne flute off with champagne of choice.
  5. Garnish with pineapple sage leaves and flowers.
  6. Makes 2 servings.

How To Make Blackberry Syrup

Ingredients

  • 1 cup fresh or frozen blackberries
  • 1 cup sugar
  • ½ cup water

Directions

  1. Put all of the ingredients into a small saucepan and slowly bring to a boil.
  2. Occasionally mash the berries against the inside of the pot. Boil for about 8 minutes or until the syrup slightly thickens.
  3. Remove the saucepot from the heat and allow to come to room temperature.
  4. Once cool strain through a coffee filter or piece of damp cheesecloth.
  5. Place syrup in a jar or container with a lid. Refrigerate until ready to use.
