A Pineapple Sage Blackberry Mimosa is a delicious herbal co*cktail recipe using fresh pineapple sage picked from the garden.
I have been sipping on herbal co*cktails like this Pineapple Sage Blackberry Mimosa all summer long. I love growing my own herbs so I can enjoy a Mojito or herbal flavored co*cktail whenever the mood stricks.
This was the first year I grew pineapple sage. Wow, I have really been missing out! I loved the flavor of this pineapple sage co*cktail. I wish I had grown it sooner.
This tropical co*cktail recipe is sure to be a hit with friends and family and you celebrate the end of summer.
How To Make a Pineapple Sage Blackberry Mimosa
Ingredients
- ⅓ cup pineapple chunks
- 4 large Pineapple Sage leaves, rinsed under cold water and patted dry
- 2.5 oz pineapple juice
- 1-2 oz blackberry simple syrup
- Pink Moscato Champagne, Prosecco or favorite champagne
- ice cubes
Directions
- Place the pineapple chunks and fresh pineapple sage leaves in a co*cktail shaker and muddle with a co*cktail muddler until the leaves are broken up and have released their herbal essence.
- Pour the pineapple juice and blackberry syrup into the co*cktail shaker along with about 4 large ice cubes. Cover and shake until well chilled.
- Remove the lid from the co*cktail shaker and strain into a champagne flute until it is halfway full.
- Top the champagne flute off with champagne of choice.
- Garnish with pineapple sage leaves and flowers.
- Makes 2 servings.

Ingredients
- 1 cup fresh or frozen blackberries
- 1 cup sugar
- ½ cup water
Directions
- Put all of the ingredients into a small saucepan and slowly bring to a boil.
- Occasionally mash the berries against the inside of the pot. Boil for about 8 minutes or until the syrup slightly thickens.
- Remove the saucepot from the heat and allow to come to room temperature.
- Once cool strain through a coffee filter or piece of damp cheesecloth.
- Place syrup in a jar or container with a lid. Refrigerate until ready to use.

- If using frozen blackberries you can omit the water. Frozen berries already have some water content.
