Caribbean desserts always have unique attractiveness that can charm people easily. So why don’t you make some of them for the next family or friend gathering?

Ingredients

  • 3 cups 3 dried fruits (prunes, raisins, cherries, currants)

  • 1 cup 1 strong rum (plus more for brushing)

  • 1 cup (8 oz) 1 room-temperature unsalted butter (extra for greasing)

  • 1 cup 1 Demerara sugar (Optional: other types of cane sugar)

  • 6 6 large eggs (at room temperature)

  • 2 cups 2 all-purpose flour (extra for dusting)

  • 2 tsp 2 baking powder

  • 0.5 tsp 0.5 ground cinnamon

  • 0.5 tsp 0.5 nutmeg

  • 0.5 tsp 0.5 allspice

  • 1.5 tbsp 1.5 browning sauce

  • 1.25 tbsp 1.25 molasses

  • 2 tsp 2 pure vanilla extract (Optional: vanilla essence)

Directions

  • Chop the dried fruits into small pieces and place them into a large bowl. Then, pour in the rum. Let the fruits soak in a cool place with a cover on your bowl for at least 8 hours. Stir occasionally during the soaking process.
  • Preheat your oven to 350°F and grease the cake pan with extra butter. When it coats all edges, lightly dust the pan with some flour. After that, flip the bowl over to remove the excess flour. Then, place parchment paper in this pan.
  • Combine butter with sugar with a mixer until you get a pale-colored mixture. Stir the eggs in, one at a time. Beat the mixture well between each one. After they’re well combined, add a tablespoon of flour to prevent curdling.
  • Drain the soaked fruits and throw them into the mixture. Stir until all are fully incorporated.
  • Sift the flour with baking powder and other spices (cinnamon, nutmeg, and allspice) in another bowl. And mix them together.
  • Add the flour mixture to the butter-fruit mixture with browning sauce and molasses. Use a silicone spatula to mix them gently.
  • Pour the batter into the cake pan. And bake for 90 minutes. When an inserted toothpick comes out clean, brush the cake with extra rum. Then, let it cool on a cool rack.

Notes

  • To reduce the soaking time, combine dried fruits with rum in a saucepan over medium heat. When these two ingredients start to boil, lower the heat and simmer for 15 minutes. Then, remove it from the heat.
  • Cover the cake pan with parchment paper for a moist bottom.
